Rhubarb bellini


This is my favourite bellini and my favourite welcome drink in the summer! You can mix it with or without alcohol and it is the perfect beginning of a long weekend brunch.

Here is my recipe for 4 glasses:

Rhubarb purée:

150 g rhubarb
50 g sugar
100 ml water

Sparkling wine

Preparation:

1. Cut the rhubarb into small pieces.
2. Place them in a skillet and add sugar and water. Boil until the rhubarb falls apart.
3. Mix until smooth and add some water if the pure is too thick.
4. Pour the purée into four glasses and fill them up with cold sparkling wine just before serving.
